Debbie Hulett's Asparagus Chicken with Black Beans

Ingredients
- 2 C chicken, raw, boned, bite-size pieces
- 1 T salted black beans, washed, minced
- 2 cl garlic, minced
- 2 T olive oil
- 4 C asparagus, diagonal slice
- 1 T corn starch
- 1 T soy sauce
- 1 t sugar
- 5 oz chicken broth
- 2 C cooked rice
Instructions
- Mix together the beans, garlic and oil, then add to the chicken and marinate 20-30 minutes.
- Whisk together the corn starch, soy sauce, sugar, and chicken broth.
- Stir fry the asparagus in olive oil. Cover and add water as needed to finish cooking, then set aside.
- Saute the chicken until browned and cooked, then add the asparagus and the gravy. Continue cooking to thicken the sauce.
- Plate and serve with rice.
